SOG knives are popular with lots of people. Just search the term at YouTube and look at the thousands of viewers who watch the knife reviews, many of which, for some reason, begin with, "Hi, Guys..."

Ergonomics - great grip, designed for one-handed opening and closing, or fixed blade that is always ready
Blade thickness - If you'll be doing heavy work, such as cutting through bone or wood, the blade will need to be thicker and stronger
Specialty - SOG knives and other brands offer field dressing knives, etc.
Blade edge - Blade type varies quite a bit from knife to knife. Saw blade, straight edge, a combination of the two and many other variations will affect performance

Blades and handles use many different material types, and the best manufacturers also provide choices in color and other "coolness" factors. The material used affects things like how easy it is to sharpen the knife, how stable or balanced it is, how well it retains its edge and resists rust, how it fits in the hand, how well it grips, especially in difficult conditions, and how well it wears over time.
